After 3 years of trying different methods this is by far the best, most effective and most versitile heating system we've found for rectangular pans.  The Presto griddle will allow pretty much all sizes of pans including 2/3 and full and the "Artisan" silicone mat reduces hot-spots to a minimum by preventing direct pan-to-griddle contact.

Because all commercial silicone baking mats don't have the same heat tolerance we sell the griddle with a glass-reinforced mat (like a Silpat) that we've fully tested at maximum griddle setting.

Adding Heat Control


The advantage of a griddle over stove-top or water bath heating is the ability to easily add temperature control.  We designed our LPTC temperature controller for this purpose by adding a pluggable sensor cord in the event you want to use it for cave cooling and heating milk on the side.
